The Key Laboratory of Egg Processing in the Ministry of Agriculture and Rural Affairs was approved and established by the Ministry of Agriculture and Rural Affairs and relied on scientific research entities established by Hubei Shendan Health Food Co., Ltd. and Huazhong Agricultural University. Committed to the research of the nutritional mechanism and process of traditional egg products, revealing the basic quality changes and process laws of poultry eggs, developing high-quality new egg products, improving key egg processing technologies, breaking through industry development bottlenecks, and promoting the sustainable and healthy development of the egg industry.
The laboratory implements an “open, mobile, joint, and competitive” operating mechanism. There are currently 41 fixed technical staff, including 4 professors and 3 associate professors. More than 80% of them have a doctorate or master's degree. Set up 3 research laboratories: 1） egg nutrition and function research laboratories; 2） egg processing research laboratories; 3） quality testing and evaluation research laboratories. In recent years, the laboratory has authorized 20 invention patents, 14 utility model patents, revised/formulated 4 national standards, 3 industry standards, and 4 local standards.
