More than a month later, the website of Forbes, a well-known American magazine, selected the most disgusting "food", and preserved eggs were on the list again. A series of events caused domestic enterprises to reflect on the promotion of Chinese traditional food culture. On August 14, Hubei Shendan Company officially launched the declaration of Chinese preserved egg production skills as intangible cultural heritage.

On August 14, Hubei Shendan Company officially launched the declaration of Chinese preserved egg production skills as intangible cultural heritage.

"The reason why the American media repeatedly talk about preserved eggs is that apart from the differences between Chinese and Western food cultures, it is very important that we do not publicize and protect Chinese traditional food culture enough." At the launching ceremony, deputy general manager of Shendan Company said.

Prior to this, at the round table meeting on "Application for Intangible Cultural Heritage of traditional Chinese preserved egg production techniques", egg experts, production enterprises and "heritage application" experts from both sides of the Taiwan Strait proposed to initiate the "application for heritage" of traditional Chinese preserved egg production techniques. Liu Huaqiao, the initiator of the preserved egg application and chairman of Hubei Shendan Company, said that as China's largest egg company, it has decided to take the lead in applying for preserved eggs.

Liu Huaqiao also said that preserved egg production has been inherited and innovated on the basis of traditional skills. Modern food processing technology is not contradictory to the protection and inheritance of traditional production skills. The two can complement each other. "Let future generations like, let foreigners like" is the pursuit of Shendan people. Shendan takes the lead in applying for preserved eggs. Its purpose is to better protect and inherit Chinese food culture and carry forward Chinese traditional food culture.

Pied eggs have a long history and profound culture

Pearled eggs have a long history in our country. Pearled eggs were invented in the 14th century, that is, the beginning of the Ming Dynasty. The earliest written record that can be found so far is Chaos Zi, a book written in 1504: a bucket of charcoal ash, a liter of lime, a pot of salt water, a pot of boiling, once warm, on the eggs, on the 5th and 7th, a mixture of yellow and white. This kind of "Chaos" is the earliest preserved egg.

At the launching ceremony, Li Chaanguo, a researcher from the Hubei Provincial Animal Husbandry and Veterinary Bureau, said that preserved eggs have been loved by people since their invention in the Ming Dynasty. They have been processed for more than 300 years and have been exported to Britain, Japan and other countries since the end of the Qing Dynasty. Pilled eggs are not only a great contribution to human diet production and processing in Chinese food culture, but also a great invention in the history of egg processing in the world.

Yao Weijun, a professor at Central China Normal University and a master of Chinese catering culture, also introduced that China's egg culture and customs have a long history and contain rich human wisdom. In the folk, there are customs such as the dragon boat festival son-in-law giving festival eggs to his mother-in-law, eating preserved eggs and salted eggs during the dragon boat festival, eating boiled eggs with vegetables on March 3, eating red eggs for happy events such as marriage and having children, and mothers hanging eggs for their children to ward off evil spirits.

Hubei inherits and innovates preserved egg industry

The reputation of "the province of a thousand lakes" and the unique freshwater resources have created a long history of poultry breeding and salted egg processing in Hubei Province. It has set a brilliant record that the purchase of poultry eggs has ranked first in China for 17 years and the export volume of poultry eggs has ranked first in China for 11 consecutive years. The output and export volume of preserved duck eggs in Hubei Province have ranked first in China. At the end of the Qing Dynasty, China began to sell preserved eggs to the outside world. At present, it is exported to more than 20 countries and regions in the world. The annual processing and sales volume of preserved eggs in China is as high as 3 million tons.

Hubei has innovated the production technology of preserved eggs. After the 1980 s, the harm of lead content in preserved eggs to human body has gradually been recognized by people. Hubei Commodity Inspection Bureau and Hubei Grain and Oil Import and Export Company organized preserved egg processing inheritors to take the lead in using trace elements beneficial to human body in China instead of lead oxide processing technology used in traditional processing, and completed the innovation and upgrading of preserved egg products. After entering the 21st century, Hubei Shendan Company took the lead in promoting the constant temperature pickling of preserved eggs in China, realizing the standardization of traditional preserved egg processing, and developing new processes and new products such as cool preserved eggs, non-spotted preserved eggs, and zinc-containing preserved eggs. In January 2011, Shendan Company took the lead in revising the National Standard for Pearled Eggs, and the traditional process of processing preserved eggs with lead was ended.

The declaration of preserved egg intangible cultural heritage is of great significance.

"A vein of culture and heart has been passed down from generation to generation, and it is a true soul through the ages." Zhang Xiaohui, executive deputy director of Hubei intangible cultural heritage protection center, quoted Premier Wen Jiabao's words to express the great significance of intangible cultural heritage declaration. Intangible cultural heritage is the cultural lifeline of human society and embodies the wisdom and spirit of a nation. According to his introduction, there are currently 106 national-level and 353 provincial-level intangible cultural heritage projects in our province, but the intangible cultural heritage declaration work still has a long way to go.

Zhang Xiaohui said that with the accelerating process of global integration and urbanization, it has become an urgent task to further strengthen the protection of intangible cultural heritage. The application of preserved egg production technology as a masterpiece project of intangible cultural heritage will have a positive impact on popularizing the knowledge of intangible cultural heritage protection, attracting the attention and concern of the whole society, participating in and supporting the protection of intangible cultural heritage.
