Jingchu News (Reporter Guo Yao) In response to the recent H7N9 avian influenza epidemic, researcher Li Chaoguo, executive director and deputy secretary-general of the China Poultry Industry Association, reminded that "dirty eggs" must be cleaned before cooking.

li chao-guo said that "dirty eggs" refer to fresh eggs that are directly circulated to the market without being cleaned and disinfected. The surface of "dirty eggs" is usually stained with chicken manure, feathers, feed powder and other dirt, which may be the carrier of avian influenza, Salmonella, Escherichia coli and other pathogens. In the case of low temperature or room temperature, the survival time of the pathogen in the egg surface dirt is also relatively long.

Foreign countries began to market management of dirty eggs very early. On December 29, 1970, the U.S. Congress approved the Egg Inspection Act, which prohibited the circulation of dirty eggs. Japan, Canada, Australia and other developed countries, most of the sales are cleaned and disinfected "clean eggs".

Li Chaoguo suggested that if you don't buy cleaning eggs, you need to clean and dry the dirty eggs. It is best to put them in food bags and refrigerate them at 3-6 degrees to prevent food from contaminating each other. Don't put them in the freezer. Freezing will cause eggs to crack and yolk to harden. At the same time, eggs should not be eaten raw or half raw, it is best to eat after cooking. If you eat it, it is best to eat it in about a week, because the shelf life of eggs will be shorter after cleaning.

Li Chaanguo especially stressed that eggs must be cleaned before cooking. We usually knock eggs on top of pots and bowls, and dirt falls into the food.
