In the lead-containing process, the lead content of preserved eggs is not more than 3 mg/kg. According to the new national standard, the lead content of preserved eggs is the same as that of fish, meat and tofu that we eat daily, which is not more than 0.5 mg/kg (fresh eggs themselves, water and air all contain trace lead).
"As the lead content of preserved eggs with lead technology cannot meet the new national standard, the new national standard declares the end of the lead technology for preserved eggs. In the future, preserved eggs will need to be produced with lead-free technology," said Li Qingyi, secretary general of Hubei Poultry Industry Association. "Pitted eggs produced according to the new national standard are more in line with the concept of healthy consumption of modern people."
